For only $55, you can experience new culinary trends, meet talented and passionate chefs, brewers of handcrafted ales and skilled restaurant owners while getting a peek behind the curtain into Olympia's handcrafted and relaxed culinary scene. Chelsea Farms’ story began in Olympia in 1987, when then-owners Linda and John Lentz started their journey of sustainable shellfish farming. “Chelsea,” which means “Port of Ships,” was chosen as the name of the company, and was also the name of John’s tugboat used for geoduck diving. The Lentz’s began with a commitment to practice organic, sustainable farming with an environmental obligation to the South Sound and Pacific Northwest as a whole. The continual progress seen through the years from Chelsea Farms could not be more evident in the community. It’s a mission current owners Shina Wysocki and Kyle Lentz, a second generation President of Pacific Coast Shellfish Grower’s Association, remain committed to fulfilling. In 2016, siblings Shina and Kyle opened Chelsea Farms Oyster Bar, continuing their parents’ mission of paying homage to the indigenous shellfish while creating a genuine rapport in the community. Chelsea Farms Oyster Bar is located at 222 Capitol Way N. Olympia, in the open marketplace of 222 Market. Owning a restaurant had always been a dream for Shina, who has a culinary background. Since opening, she has curated each piece of the bar to be a piece of history and opportunity, from the decor to her staff. Basilico stands out for its high level of freshness, quality and true authenticity. “Here, everything is truly made from scratch, and we do not compromise on that." Pappardelle al Cinghiale has become one of their most popular dishes, a fresh wide cut egg pasta served tossed with wild boar long soaked in red wine and spices and then infused with a fresh mix of herbs in a delicate tomato sauce in winter, and with olives and braised red wine sauce in summer.
